New Steakhouse Alex Prime Debuts at El Cortez Casino in Downtown Las Vegas

El Cortez Casino in Downtown Las Vegas has unveiled its new steakhouse, Alex Prime, which comes after an $8.5 million renovation of the prior dining establishment, Siegel’s 1941. Now, guests can enjoy breakfast and lunch at Siegel’s 1941 while Alex Prime caters to dinner patrons starting at 5:00 p.m.

The recent soft opening showcased a variety of menu items, with standout dishes such as chicken parmesan, made at the suggestion of El Cortez owner Kenny Epstein. Touchingly, the restaurant is named in memory of Epstein’s daughter, Alexandra “Alex” Epstein-Gudai, who worked at El Cortez for 15 years before her passing in February 2026. Alex Prime features a combination of classic and contemporary dishes, including USDA Prime steaks and a robust wine program emphasizing Cabernets and Bordeaux-style reds, ensuring a memorable dining experience.
